Aam ka Achaar (Mango Pickle) is a delicious Indian accompaniment that can instantly spruce up any meal with some spice and tangy flavor. Mango pickle is prepared such that raw mango pieces are preserved in oil and spices for longer days.

What Ingredients it Requires ?
- 1 Kg Kaccha Aaam (Green Mango)
- 125 gram Rai ki dal (mustard seeds)
- 1 bowl Methi dana (Fenugreek Seeds)
- 1 Tbl Spoon Haldi Powder(Turmeric Powder)
- 2 Tbl Spoon Hing (Asafoetida)
- Lavang Miri Dalchini (Cloves,Black Pepper,cinnamon)
- 1 bowl Namak
- 2 bowl Red Mirchi Powder
- 15 to 20 pcs Lahsun (Garlic)
- 1 Bowl Badishep (Sweet fennel)
How to prepare the recipe:
- Take oil in the pan and start the flame in gas stove
- Grind Rai ki dal in mixer but do not grind it fine
- Grind Badishep in mixer but do not grind it fine
- Grind Methi Dana in mixer but do not grind it fine
- Grind Dhania in mixer but do not grind it fine
- Grind Lavang. Miri, Dalchini in mixer but
- do not grind it fine
- Grind Lahsun in mixer but do not grind it fine
- Now stop the gas knob once oil get hot enough to
- add other ingredients for achaar
- Add hing in oil and stir it well
- Add Lehsun pieces, Dhania in oil and stir it well
- Add Lavang, Miri, Dalchini in oil and stir it well
- Add Red mirchi powder, Haldi powder
- in oil and stir it well
- Add Rai ki Daal & Salt in oil and stir it well
- Add Gud(Jaggary)(optional) in oil and stir it well
- Now your Achaar Mixture is ready
- Cut Kacche aam in small pieces and add in
- Achar mixture and stir it well
- Add achar mixture in jar for fermentation process
- Cover jaar with cotton cloth so that it will get the air
- After 5 to 8 days later Aam ke achar is ready to eat
